For 6 cups of cooked rice, mix up 1/2 c vinegar and 1/2 c sugar. This makes about 10 of the nori rolls.
After the rice is cooked, do the mixing in a shallow pan, like a roasting pan. Use the rice paddle to take a scoop of rice, then dip the paddle in the sugar/vinegar mixture, dripping the liquid on the rice and mixing it to coat the grains of rice. Repeat this, adding to the pan, until all the rice is mixed and all the mixture is used. Then cover the pan with a damp tea towel to keep it from drying out as you make the sushi.
Mix up more of the sugar/vinegar to use to dip your fingers in, and to moisten the edges of the nori (seaweed) to seal the rolls. Your fingers get pretty sticky when handling the rice, so this helps.
